What Is Almás Pite?
The Hungarian word almás means “apple,” while pite refers to a pie or pastry. Unlike a typical American apple pie, Hungarian Almás Pite is often prepared as a rectangular or square pastry with a layer of apple filling sandwiched between two thin sheets of dough.
The filling is fragrant with cinnamon and naturally sweet-tart apples, while the pastry provides a delicate, crumbly texture.
Ingredients
For the Pastry
- 3 cups all-purpose flour
- ¾ cup unsalted butter, cold and cubed
- ½ cup granulated sugar
- 1 teaspoon baking powder
- Pinch of salt
- 2 egg yolks
- 3–4 tablespoons sour cream
- 1 teaspoon vanilla extract
For the Apple Filling
- 6–7 medium apples, peeled and grated
- ½ cup granulated sugar, or to taste
- 1½ teaspoons ground cinnamon
- 1 tablespoon lemon juice
- 2 tablespoons breadcrumbs or semolina
For Finishing
- 1 egg, beaten
- Powdered sugar, for serving
