Rigó Jancsi is a classic Hungarian chocolate pastry traditionally made from two layers of chocolate sponge cake filled with rich chocolate cream and finished with a chocolate glaze.
The cake is typically cut into neat rectangular portions, allowing the contrasting layers to show beautifully.
Its name comes from Rigó Jancsi, a famous Hungarian Roma violinist who became internationally known around the turn of the 20th century. The pastry’s romantic story and luxurious appearance helped make it an enduring part of Hungarian dessert culture.
Ingredients
For the Chocolate Sponge
- 5 large eggs, separated
- ½ cup (100 g) granulated sugar
- ½ cup (65 g) all-purpose flour
- ¼ cup (25 g) unsweetened cocoa powder
- 1 teaspoon vanilla extract
- Pinch of salt
- 2 tablespoons melted butter
For the Chocolate Cream
- 1½ cups (360 ml) heavy whipping cream
- 7 oz (200 g) dark chocolate, finely chopped
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- Pinch of salt
For the Chocolate Glaze
- 5 oz (140 g) dark chocolate
- ½ cup (120 ml) heavy cream
- 1 tablespoon unsalted butter
- 1 tablespoon honey or corn syrup, optional
Optional Filling
- 3–4 tablespoons apricot jam
The thin layer of apricot jam adds a subtle fruity contrast to the rich chocolate.
