Hungarian Floating Island (Madártej)

Light, delicate, and wonderfully nostalgic, Madártej—often translated as Hungarian Floating Island or “Bird’s Milk”—is one of Hungary’s most beloved traditional desserts.

It may look elegant and sophisticated, but the ingredients are surprisingly simple: milk, eggs, sugar, and vanilla. Soft clouds of whipped egg white float on a silky vanilla custard, creating a dessert that is both comforting and refined.

What Is Madártej?

Madártej consists of two main components:

  • Vanilla custard made from milk and egg yolks
  • Lightly poached meringue “islands” made from whipped egg whites and sugar

The egg-white clouds are traditionally poached in hot milk before being placed on top of the custard.
