Zserbó Szelet – Traditional Hungarian Walnut and Apricot Cake

Zserbó Szelet, also known as Gerbeaud Cake, is one of Hungary’s most famous traditional desserts. It consists of thin layers of buttery yeast pastry filled with apricot jam and finely ground walnuts, then finished with a smooth layer of chocolate on top.

Rich but balanced, this elegant Hungarian cake is especially popular around Christmas, Easter, and other family celebrations.

Ingredients

For the Dough

  • 4 cups (500 g) all-purpose flour
  • 1½ teaspoons active dry yeast
  • ½ cup (120 ml) warm milk
  • 2 tablespoons granulated sugar
  • 250 g unsalted butter, softened
  • 2 egg yolks
  • 1 pinch of salt
  • 1 teaspoon vanilla extract

For the Filling

  • 1½ cups (300–350 g) apricot jam
  • 2 cups (200 g) finely ground walnuts
  • ¾ cup (150 g) granulated sugar
  • Zest of 1 lemon

For the Chocolate Topping

  • 150 g dark chocolate
  • 2 tablespoons butter
  • 1 tablespoon vegetable oil, optional
