
Hungarian Walnut Rolls, traditionally called Diós Bejgli, are a beloved Hungarian pastry made with a rich, buttery yeast dough and a sweet walnut filling. They are especially popular during Christmas and other family celebrations.
Ingredients
For the Dough
- 4 cups (500 g) all-purpose flour
- ½ cup (100 g) granulated sugar
- 7 oz (200 g) unsalted butter, softened
- 1½ tsp active dry yeast
- ½ cup (120 ml) lukewarm milk
- 2 egg yolks
- ½ tsp salt
For the Walnut Filling
- 2½ cups (250 g) finely ground walnuts
- ¾ cup (150 g) granulated sugar
- ½ cup (120 ml) milk
- 1 tsp vanilla extract
- 1 tsp grated lemon zest
- ½ tsp ground cinnamon
- 2 tbsp raisins, optional
For the Egg Wash
- 1 egg yolk
- 1 tbsp milk
