Meggyleves, or Hungarian Chilled Cherry Soup, is a unique and refreshing classic of Hungarian cuisine. Made with tart cherries, sugar, warm spices, and a creamy touch of sour cream, this beautiful ruby-red soup is traditionally served cold.
Unlike the savory soups many people expect, Meggyleves is a sweet fruit soup that is especially popular during the warm summer months. Its combination of sweet, tart, creamy, and lightly spiced flavors makes it an unforgettable Hungarian specialty.
What Is Meggyleves?
The Hungarian word meggy means sour cherry, while leves means soup. Together, Meggyleves literally means sour cherry soup.
Traditionally, fresh sour cherries are gently cooked with sugar, cinnamon, and cloves. The mixture is then finished with sour cream, creating a smooth and lightly creamy soup.
It can be served as a refreshing first course, a light dessert, or a special summer treat.
