Hungarian Beef Stew (Marhapörkölt)

Hungarian Beef Stew, known as Marhapörkölt, is one of the great classics of Hungarian home cooking. Slow-cooked beef is combined with onions, sweet Hungarian paprika, tomatoes, and peppers to create a deeply savory stew with a rich, silky sauce.

Unlike many Western-style beef stews, traditional Hungarian pörkölt does not rely on a large amount of stock or flour to create its sauce. Instead, the flavor develops slowly from onions, paprika, rendered fat, beef, and gentle cooking.

It is hearty, comforting, and especially delicious served with nokedli (Hungarian dumplings), boiled potatoes, or fresh bread.

Ingredients

  • 2½ lb beef chuck, cut into 1½-inch cubes
  • 2 large onions, finely chopped
  • 3 tablespoons lard or vegetable oil
  • 2–3 tablespoons sweet Hungarian paprika
  • 1 green bell pepper, chopped
  • 1 ripe tomato, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon caraway seeds, optional
  • 1 teaspoon salt, plus more to taste
  • ½ teaspoon freshly ground black pepper
  • 1½ cups water or beef broth
  • 1 bay leaf, optional
  • 1 small hot pepper, optional
