How to Make Hungarian Palacsinta
1. Prepare the Batter
In a large mixing bowl, whisk together the eggs, milk, sugar, and salt.
Gradually add the flour while whisking continuously to create a smooth batter without large lumps.
Add the sparkling water and melted butter, then whisk again until the batter is thin and pourable.
For the best texture, allow the batter to rest for about 15–20 minutes.
2. Heat the Pan
Place a nonstick skillet or traditional crepe pan over medium heat.
Lightly grease the surface with a small amount of butter or oil.
The pan should be hot enough for the batter to begin cooking immediately but not so hot that the crepe browns too quickly.
3. Cook the Crepes
Pour a small ladleful of batter into the center of the pan.
Immediately tilt and rotate the pan so the batter spreads into a very thin, even circle.
Cook for approximately 1–2 minutes, until the edges begin to lift and the underside is lightly golden.
Flip the crepe and cook the other side for another 20–40 seconds.
Transfer to a plate and repeat with the remaining batter.
4. Add the Filling
Spread your chosen filling over the cooked crepe.
For a classic Hungarian combination, spread apricot jam over the surface and sprinkle with a little powdered sugar.
Roll the crepe tightly or fold it into quarters.
Continue until all the crepes have been filled.
Traditional Palacsinta Filling Ideas
One of the best things about Palacsinta is how many ways it can be served.
Apricot Jam: A classic Hungarian favorite that pairs beautifully with the delicate crepe.
Walnut and Sugar: Ground walnuts mixed with sugar create a rich, nutty filling.
Cottage Cheese: Sweetened cottage cheese with a little lemon zest makes a creamy and refreshing filling.
Cinnamon Sugar: Simple, aromatic, and perfect for a quick homemade treat.
Chocolate: Chocolate spread makes Palacsinta especially popular with children and anyone with a sweet tooth.
Tips for Perfect Palacsinta
Keep the batter thin. Palacsinta should be delicate rather than thick.
Rest the batter. A short resting period helps produce smoother, more tender crepes.
Use a well-heated pan. Consistent heat helps each crepe cook evenly.
Don’t use too much batter. A small amount is enough to create a thin crepe.
Grease lightly. Too much butter or oil can make the crepes greasy and interfere with their delicate texture.
How to Serve Palacsinta
Hungarian crepes are traditionally served warm, although they are also delicious at room temperature.
