Hungarian Dobos Torte (Dobos Torta) 🇭🇺

Few Hungarian desserts are as instantly recognizable as Dobos Torte. With its thin layers of sponge cake, silky chocolate buttercream, and signature crisp caramel topping, this elegant cake has been a favorite of Hungarian pastry lovers for more than a century.

A Little History

Dobos Torte, or Dobos Torta, was created in the late 19th century by Hungarian confectioner József C. Dobos. He introduced the cake at the 1885 National General Exhibition of Budapest, where its unusual construction and long-lasting qualities attracted considerable attention.

At a time when refrigeration was limited, the cake’s rich buttercream and caramel-coated top helped give it a longer keeping quality than many contemporary cakes. It eventually became one of Hungary’s best-known desserts and spread throughout Europe.

Ingredients

For the Sponge Layers

  • 6 large eggs, separated
  • 150 g granulated sugar
  • 150 g all-purpose flour
  • 40 g unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • Pinch of salt

For the Chocolate Buttercream

  • 200 g dark chocolate, finely chopped
  • 250 g unsalted butter, softened
  • 150 g powdered sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Pinch of salt

For the Caramel Top

  • 150 g granulated sugar
  • 1 tablespoon water
  • 1 teaspoon lemon juice
