Hungarian Stuffed Peppers in Tomato Sauce (Töltött Paprika)

Ingredients

For the Stuffed Peppers

  • 6–8 Hungarian wax peppers or mild banana peppers
  • 1½ pounds ground pork
  • ¾ cup uncooked white rice
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 tablespoon sweet Hungarian paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Tomato Sauce

  • 4 cups tomato passata or crushed tomatoes
  • 1½ cups water or beef broth
  • 1 tablespoon tomato paste
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 1 small onion, finely chopped
  • 1 tablespoon all-purpose flour, optional, for thickening
