
Instructions
1. Make the Dough
- In a large bowl, combine the flour, sugar, and salt.
- Add the softened butter and work it into the flour until the mixture resembles fine crumbs.
- Add the sour cream, egg yolks, and vanilla.
- Mix until a soft dough forms.
- Wrap the dough and refrigerate for at least 1 hour.
2. Prepare the Filling
- Combine the ground walnuts, sugar, milk, vanilla, and lemon zest in a saucepan.
- Cook over low heat for several minutes, stirring until thickened.
- Allow the filling to cool completely.
3. Shape the Kiffles
- Divide the chilled dough into several portions.
- Roll each portion very thin on a lightly floured surface.
- Cut into small squares or circles.
- Place a small amount of walnut filling in the center.
- Fold or roll the dough around the filling and shape into a crescent.
4. Bake
Place the kiffles on a parchment-lined baking sheet.
Bake at 350°F (175°C) for 12–16 minutes, until the edges are lightly golden.
Do not overbake—the pastry should remain tender.
5. Finish
Allow the kiffles to cool for a few minutes, then generously dust them with powdered sugar.

- Keep the dough chilled while working.
- Don’t overfill the pastries, or they may open during baking.
- Roll the dough thin for a delicate texture.
- Let the walnut filling cool before using it.
