Hungarian Dobos Torte (Dobos Torta)

Dobos Torta is one of Hungary’s most famous traditional cakes. Created in the late 19th century, this elegant dessert is made with thin layers of sponge cake, a smooth chocolate buttercream, and a distinctive caramel-covered top.

Its signature caramel layer is more than decoration—it adds a delicate crunch that contrasts beautifully with the soft sponge and creamy chocolate filling.

Ingredients

For the Sponge Layers

  • 6 large eggs, separated
  • 150 g (¾ cup) granulated sugar
  • 150 g (1¼ cups) all-purpose flour
  • 1 teaspoon vanilla extract
  • Pinch of salt

For the Chocolate Buttercream

  • 200 g (7 oz) dark chocolate
  • 250 g (1 cup + 2 tablespoons) unsalted butter, softened
  • 150 g (¾ cup) granulated sugar
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • Pinch of salt

For the Caramel Topping

  • 150 g (¾ cup) granulated sugar
  • 1 tablespoon water
  • 1 tablespoon lemon juice, optional
