
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the mashed potatoes, flour, butter, egg, salt, baking powder, sugar, and sour cream.
- Knead gently until a soft, smooth dough forms. Add a little milk if the dough feels too dry.
- Cover and refrigerate the dough for 30 minutes.
- Roll the dough out to about ½ inch (1.25 cm) thick.
- Cut into small rounds using a cookie cutter.
- Place the biscuits on the prepared baking sheet. For the traditional appearance, lightly score the tops with a knife in a crisscross pattern.
- Brush the tops with a little beaten egg if desired.
- Bake for 20–25 minutes, until puffed and golden brown.
- Cool slightly and serve warm or at room temperature.
