1. Prepare the Chicken

Season the chicken pieces with salt.

Bone-in pieces are especially useful because they remain juicy during the cooking process and contribute flavor to the sauce.

2. Cook the Onions

Heat a little oil or another cooking fat in a large pot.

Add finely chopped onions and cook gently until soft and translucent.

The onions should develop sweetness without becoming heavily browned.

3. Add the Paprika

Reduce the heat or temporarily remove the pot from the burner.

Add Hungarian paprika and stir it into the onions.

This helps release the paprika’s aroma while reducing the risk of burning it.

4. Add the Chicken

Place the chicken pieces into the paprika and onion mixture.

Turn them so that they become coated in the flavorful base.

Depending on the recipe, chopped tomatoes or peppers may also be added at this stage.

5. Add Liquid and Simmer

Add enough water or chicken stock to create a sauce.

Cover the pot and allow the chicken to simmer gently.

Slow cooking gives the meat time to become tender while the paprika, onions, and chicken juices combine into a rich sauce.
