Hungarian Green Pea Soup – Zöldborsóleves

Instructions

  1. Heat the butter or oil in a large pot. Add the onion and cook until softened.
  2. Add the carrots and parsley root. Cook for 3–4 minutes.
  3. Remove the pot briefly from the heat and stir in the Hungarian paprika.
  4. Add the green peas and broth. Season with salt, pepper, and sugar.
  5. Bring to a boil, then reduce the heat and simmer for 15–20 minutes, until the vegetables are tender.
  6. To make the nokedli, whisk the egg with salt. Gradually add the flour to form a soft, sticky dough.
  7. Drop small pieces of the dough into the simmering soup using a teaspoon.
  8. Cook the dumplings for 3–5 minutes, until they float to the surface and are cooked through.
  9. Stir in the fresh parsley and simmer for another minute.
  10. Serve hot.
